I hope you had a great week! I sure did. This week’s blog will focus on Vancouver which is the third part of my experience while traveling by train on one of the world’s most beautiful itineraries across the Canadian Rocky Mountains. In case you missed the first two parts where I shared the details about my journey on the train, you can find them on my website by clicking on my Travel Blog.
My ten-day adventure started in Vancouver where Joyce and I spent 2 full days exploring all the city has to offer – and wow does it offer! It’s such an eclectic city, equal parts India, China, England, France, and the cool Pacific Northwest vibe.
Vancouver is surrounded by majestic mountains, sparkling ocean waters, rainforests, and beautiful foliage throughout all four seasons. And of course, with all these natural beauties, this makes Vancouver one of the most beautiful cities in the world.
Canadians are well known for their friendly nature, and the people of Vancouver take it to a whole new level, showing great pride in their welcoming, clean, safe streets – day or night. There is so much to see and do in Vancouver that it would take weeks to really see it all. But no need to worry as I have mapped out my visit with plenty of suggestions for how to make the most of your short time there.
Here are some of our fun-filled adventures!
Dr. Sun Yat Sen Classical-Chinese Gardens
Dr. Sun Yat-Sen Classical Chinese Garden was named as the world’s top city garden by National Geographic. It opened in 1986 and is the first Chinese or ‘Scholars Garden’ built outside of China.
The jade green pond, koi fish, and the collection of 150-year-old trees plus the Tai Hi rock imported from China, are a few of the delights in the garden. It took 53 master craftsmen from China and 950 crates of traditional material using 14th century methods – no screws, glue or power tools to build. It’s a beautiful, peaceful garden, especially in the early morning before most visitors come to enjoy.
Granville Island Public Market
The Granville Island Public Market is the jewel in the island’s crown and a MUST visit. This large indoor market features a fascinating assortment of colorful food and produce stores, showcasing handcrafted products and the very finest in unique gifts. The area is packed with theaters, market stalls, art studios, restaurants, bars and bookstores. It’s a great place for unique souvenirs and for tasting fresh seafood caught just offshore.
Grouse Mountain – The Peak of Vancouver
The best lookout views of Vancouver are 20 minutes from downtown and a quick Skyride up to the top of Grouse Mountain, 4,100 feet above the city. In addition to the view, you can enjoy thrilling activities like Ziplines and Mountain Ropes, the Refuge for Endangered Wildlife along with an expansive network of hiking trails in the summer. There is so much to see and do, that you could make your visit a full day enjoying all the mountain has to offer.
Stanley Park
Stanley Park is beautiful! It is bigger than Central Park in New York City. There are bike trails and running paths along the shoreline, colorful gardens, horse drawn carriage rides, picnic areas, a lighthouse and a totem pole park. It is located northwest of downtown and is one of the most famous parks within the city limits of Vancouver. The park attracts thousands of residents and visitors daily who enjoy the lush forest trails, relaxing lakes and beaches, the water park, and the Vancouver Aquarium.
It is the best place to enjoy spectacular views of the north shore mountains and the lovely Lion’s Gate Bridge. If you are feeling hungry, there are plenty of cafes along the park trails where you can enjoy a light brunch/lunch.
Canada Place
Built as the Canadian pavilion for the Expo ’86 World’s Fair 30 years ago, Canada Place was designed in the form of a giant ship ready to set sail. It’s nice to stroll along the boardwalk and take in the views of the water and a marina in the distance. Due to the size of the pier, it’s the perfect location for cruise ships to dock while in port.
Canada Place is home to the Vancouver Convention Centre, and to the thrill seeking, adventurous attraction called “FlyOver Canada” which is a multi-sensory film experience…a flying adventure over Canada from coast to coast. It’s a bit similar to the ride called Soarin’ at Disney World.
Also being in the center of the action, Canada Place is surrounded by the Olympic Cauldron, Gastown, Granville Street, and Coal Harbor.
Capilano Suspension Bridge and Cliffwalk
The Capilano Suspension Bridge is the longest suspension bridge in the world. It crosses over the Capilano River in the district of North Vancouver. To be honest, it was a little scary especially when the bridge swayed back and forth. I think the little kids enjoyed watching us adults act like scaredy cats as we held onto the railing for dear life. They loved the thrill. For me…at one point my legs were a little shaky so I had to grab the railing. The good news…I made it to the other side. The bad news…I had to go back the same way I came to get to be able to leave the park!
The Park also includes Cliffwalk – a granite precipice along the Capilano River that takes you through rainforest vegetation on a series of unobtrusive cantilevered and suspended walkways jutting out from the granite cliff face above the Capilano River. I was glad that the pathway was built of study wood and metal and didn’t sway to and fro like the Capilano Suspension Bridge.
The scenery was beautiful…a waterfall, a flowing river, the mountains and the fall foliage! As you can see, we loved the experience.
A “Wok” around Chinatown
Established in the 1890s, Vancouver’s Chinatown has been humming busily for more than a century with vivid colors, exotic cuisine, and a vibrant culture. Rich in history and architecture, this area east of downtown boasts North America’s third-largest Chinatown after New York and San Francisco.
We had a fabulous time on our “wok” around Chinatown with “Chef Robert”. We visited the markets, a tea shop, tasted a variety of Chinese specialties like barbequed meat, delicate pastries, herbal products and ended our “wok” with a delicious Dim Sum lunch.
Street Art
In Vancouver, street art and murals have become the status quo. In fact there’s such a concentration of unique art there are several self-guided tours available to explore the art and the stories behind them. Also in August, there is an annual Vancouver Mural Festival featuring 60+ new murals across 11 different neighborhoods. Looking at these pictures you can see why – creativity, diversity, and vibrancy.

There’s something magical about the rhythm of the train wheels, the sound of the conductor’s “All aboard!” and the stunning views out the big windows. It makes you feel truly transported into a new dimension when onboard, which is just what one wants on vacation.
Snaking its way through the heart of the Canadian Rockies, this most luxurious and scenic train journey is an experience unrivalled in North America.
The pleasure of traversing the globe by rail has captured the hearts and dreams of travelers for years, and even though the modern age of cheap and fast flights has opened destinations like never before, Rocky Mountaineer has embraced the slow, romantic travel that only a train trip can offer.
I just returned home from the most spectacular train adventure through the Canadian Rockies and I’m excited to share about my journey with you. There were so many amazing highlights that it was hard to narrow it down. So, for additional inspiration, I added a lot of pictures and details to my Facebook and Instagram pages! And I posted my trip itinerary on my website for you to follow along. This adventure was truly magical in every way!
An Adventure by Rail!
My journey began in Vancouver where I spent the first 2 days exploring the city, learning about the history, visiting the Capilano Suspension Bridge Park, shopping at Granville Market and taking in the views at the top of Grouse Mountain with my friend Joyce. There is so much to see and do in Vancouver that we both want to return so we can capture what we missed.
On the third day, we boarded the train early in the morning to experience the “First Passage to the West”. We certainly had a “room with a view”! Our seats were in the bi-level glass domed coaches which was ideal for viewing the incredible landscapes and the abundant wildlife. And when it was a bit too sunny, the hosts flicked a button and the glare disappeared. Every now and again we would jump across the aisle so we could gaze at the stunning landscape that was before our eyes.
Each row of seating was very spacious and had a lot of legroom. Our seats were very comfortable, reclined, and had seat warmers for the chilly mornings.
We traveled by train during the day and spent the nights at beautiful properties in the major cities like Lake Louise and Banff. Fairmont Chateau Lake Louise was my favorite and a hotel that I longed to see in person since I was a teenager.
A Feast for our Senses
Our taste for adventure wasn’t the only thing we indulged in on our journey. Traveling between Vancouver and the Canadian Rockies, what we found on our plate was just as impressive as to what we saw outside the glass-dome windows. We dined on multi-course breakfasts and lunches that were served on board the train and created by the Rocky Mountaineer professional culinary team.
Since Joyce and I were traveling in Goldleaf status, we walked downstairs to a dedicated dining room for our meals. We enjoyed freshly prepared, chef-created menus for both breakfast and lunch. We started our day with either a fruit smoothie or fresh fruit and then had choices of either a spinach and cheese omelet, buttermilk pancakes served with strawberries and warm Canadian maple syrup or eggs Benedict with seasoned potatoes. Everything was delicious!
At lunch, we had to make tough choices between Alberta beef, roasted chicken and wild Pacific caught salmon. Lucky for us, every choice was the right one!
Much of the inspiration for the menus comes from what we saw along the way, with fresh ingredients sourced seasonally from British Columbia and Alberta. In fact, some of their routes pass right by the farms, such as Desert HIlls Ranch in Ashcroft, just west of Kamloops. To complement our meals, premium British Columbia wines from the Okanagan Valley were also served onboard, along with local craft beer. Together with gourmet snacks served throughout the journey, the wine, beer and high-end spirits are all complimentary – and were perfect as we toasted to our adventure.
Spectacular Scenery
The Canadian Rocky Mountains are a UNESCO World Heritage site. They are filled with rugged mountain peaks, ice fields, and glaciers, alpine meadows, lakes, waterfalls, extensive karst cave systems, thermal springs, and deeply incised canyons.
Some of the best-known mountain scenery on Earth is concentrated in a set of seven parks in the Canadian Rocky Mountains. And the beauty of traveling by train, is that we saw so many features that make up this World Heritage site.
Not only did we travel in signature bi-level glass-dome coaches, we also went outside on our exclusive viewing platform to get closer to the action. The views were stunning everywhere we looked…up, down, left, right! The color of the water, the snow capped mountains, the wildlife roaming to and fro and the sounds of the water rushing down the hills…it was majestic and magical.
My finger was always on my camera because I didn’t want to miss capturing another beautiful site…. sites that I will look at again and again after I return home from this adventure.

The Railroad Folks…a delight!
One of the best parts of our journey was meeting other passengers and staff from all over the world. Michelle (from Vancouver) and Leigh (from the UK) were our hosts in the upper level coach. We enjoyed their commentary which was interesting and informative and at times quite funny. We learned about the history of the Canadian Railway, saw historical landmarks, crossed the Continental Divide and heard fun facts about the communities along our route. They were quick to point out wildlife like Sea Eagles, ospreys, elk, and moose. We learned quite a lot and found it very interesting.

As I just experienced first-hand, there has never been a better time to travel to Canada than right now! Here’s why!
First – The number of international travelers is down about 75%, so you won’t find long lines to enter museums or historical sites. No need to worry about making your way through a crowd of people. You’ll have the opportunity to see more than you normally would in destination.
Second – The locals are thrilled to see and serve you since travel makes up a large proportion of their GDP. They want to make sure you have an enjoyable experience so that you’ll return home and encourage others to travel there too.
Third – The weather in the fall… beautiful, colorful foliage and snow capped mountains! Picturesque! I personally love the fall weather, the colorful leaves and the surprise of a snow squall every now and again!
Fourth – Since there are less tourists, your dollars go much farther as companies want to compete for your business.
Fifth – Canada is open for travel and the number of daily Covid cases are extremely low. Vaccinated tourists are welcomed per the Canadian regulations. Masks are also required.
BONUS to traveling to Canada now…your pictures will be tourist free. AMAZING!
And the biggest reason…Canada is full of beauty and wildlife waiting for you to see and experience with your own eyes!

When you hear someone mention traveling by train, often times we associate it with a way to commute to work. But for others, riding on a train is a vacation in itself. Not only are you moving from point A to point B, looking forward to having fun upon arrival – you’re having fun while traveling.
One advantage of traveling by train is the opportunity to see the beautiful scenery all throughout the journey. No matter which direction you look…left, right or through a Vista Dome roof, you will see so much more compared to when you travel by plane.
And this week I will be traveling by train experiencing one of the world’s most beautiful itineraries across the Canadian Rocky Mountains.

Last weekend my grandson and I went to the North Carolina Transportation Museum in Spencer to enjoy a “Day Out with Thomas the Tank Engine”! How fun, right? You should have seen Owen’s face as we got closer and closer to Thomas. His eyes lit up and he was star-struck. The bright blue train that goes clickety-clack down the track on television or in a video was right there before his eyes. Not only was the real Thomas there, so was Percy, the caboose.
Kids and many adults are fascinated by trains…how they work, which car is which and what they do, what it’s like to be a conductor, the thrill of the ride and more.
So, Owen and I hopped aboard for 2 separate train rides…one when Thomas was the engine and a second where Percy was the caboose. He was so excited! His cute little face peered out the window, listening the the sound of the wheels as they moved along the tracks all the while taking in the beautiful scenery along the route.
First Passage to the West!
Now it’s my turn to travel by train and one that will be full steam ahead. I’ll be experiencing the legendary rail route for a 10-day journey that starts in Vancouver and travels to Banff/Lake Louise. We will travel by train during the day then will overnight at stunning hotels in those major cities. As we stop along the way, we will enjoy some really amazing expeditions to ensure we never miss any of the spectacular scenery. Stay tuned for pictures of these experiences!

Onboard Experience
There are two levels of service available where you choose between Excellent and Extraordinary – SilverLeaf and GoldLeaf. For this trip, my friend and I chose GoldLeaf. They say it’s where Five-Star Comfort meets Five-Star Views. We’ll indulge our senses with gourmet meals prepared by Executive Chefs and enjoy expansive views through the panoramic windows of a bi-level glass dome coach to the Canadian Rockies. AMAZING!!
First Passage to the West Itinerary
Day 1
Arrive in Vancouver, Canada and transfer to our hotel to prepare for the adventure.
Day 2 & 3
Explore Vancouver where the mountains meet the sea, and every scene looks like something straight from a postcard. Vancouver was founded as “Gastown” by an Englishman with a penchant for beer and storytelling. Today Gastown is a historic section of the Canadian metropolis, and the lively pubs still reflect the area’s former status as a sort of community drinking center. The city’s forests, grand parks, and impressive suspension bridge beckon travelers to explore them, as do the city’s shops and museums. Relive the glory of the 2010 Winter Games with visits to Olympic venues and the marvelous Olympic Cauldron.
Day 4
Depart Vancouver Station at 7:30am and travel to Kamloops, in the heart of British Columbia’s interior. On the journey we will see dramatic changes in scenery, from the lush green fields of the Fraser Valley, through forests and winding river canyons surrounded by the peaks of the Coast and Cascade Mountains, to the desert-like environment of the BC Interior. Highlights include the rushing waters of Hell’s Gate in the Fraser Canyon and the steep slopes and rock sheds along the Thompson River. The day concludes along the shores of Kamloops Lake into Kamloops Station between 6:30pm and 7:30pm. Then we’ll will transfer to our hotel.
Day 5
Depart Kamloops Station around 6:30am, to continue our journey east to the mighty Canadian Rockies and the province of Alberta. We’ll travel across ranch lands, along rocky lakeshores, over high mountain passes and through the remarkable tunnels that form part of the rich rail history of the Canadian Rockies. Highlights include Craigellachie, where the last spike of the Canadian Pacific Railway was driven, the climb over Rogers Pass, the Kicking Horse Canyon, the Spiral Tunnels and the glaciers and snow-capped peaks of the Canadian Rockies. We’ll arrive at 5:00pm and transfer to our famous hotel, The Fairmont Chateaux Lake Louise. STUNNING!!
Day 6
Columbia Icefield Discovery & Glacier Sightseeing Tour.
We’ll go onto the surface of the Athabasca Glacier by an Ice Explorer; a massive vehicle specially designed for glacial travel. Here our guide will share a wealth of fascinating information about glaciers, icefields, and their impact on our environment. During the tour we’ll step out onto the glacier and take in the most stunning alpine and glacial vistas. We’ll also go out on the award-winning Glacier Skywalk, a 1,640 long boardwalk extending 100 feet out over the Sunwapta Valley allowing one to float in the sky amidst spectacular scenery.
Day 7
Touring Lake Louise to Banff, with Yoho National Park Tour.
This half-day tour will take us into Yoho National Park to view its natural wonders. Among the attractions are the Spiral Tunnels, Emerald Lake and a natural rock bridge that spans the Kicking Horse River. During the day our luggage will be transfered to the Fairmont Banff Springs Hotel. Located in the heart of Banff National Park, the world-famous Fairmont Banff Springs hotel stands as a landmark in the alpine town of Banff, Alberta. Canada’s “Castle in the Rockies” has been providing legendary hospitality to guests for more than 125 years. The Fairmont Banff Springs is a year-round luxury mountain resort that offers a championship golf course, the award winning European-style Willow Stream Spa, and authentically local dining experiences.
Day 8
Free day in Banff to explore and visit the spa!
Day 9
Continue to explore the Banff/Lake Louise area, including a ride on the Banff Gondola to the top of Sulphur Mountain for 360-degree views of the Banff townsite and surrounding mountains.
From there we’ll visit Bow Falls, Surprise Corner and the Hoodoos.
Next, we’ll jump on a Rocky Mountain Helicopter Tour going up almost 2 miles above sea level so we can get an appreciation for the sheer size of the glaciers, mountain vistas, lakes, and the waterfalls in Kananaskis County.
Our day will end at the Calgary Tower where we’ll feel like we are suspended in mid-air. Soaring 525 feet above the city, with 360-degree views and the Rocky Mountains in the distance, it’ll take our breath away. INCREDIBLE!
Day 10
Today we depart. Time to head back to Charlotte, NC.

I just returned from a trip to Egypt and Greece, two of my bucket list destinations, and I can honestly say it exceeded my expectations. Being in the business, I have the opportunity to travel to far off destinations. But I did not expect to be impacted by these two countries in such a profound way.
I loved exploring Egypt so much that I am ready to go back to see what I missed. So I decided to put together a small group. Egypt…why is now the time to go?

I personally loved the hot weather and the bright sunny days because many of our tours were outside. It was pleasant exploring in the sunshine!
Fourth – Since there are less tourists, your dollars go much farther as companies want to compete for your business.
Fifth – Egypt is open for travel and the number of daily Covid cases is extremely low. Anyone employed in the travel industry is required to be vaccinated and wear a mask.
BONUS to traveling to Egypt now…your pictures will be tourist free. AMAZING!

Almost every one of us will agree that life’s real education happens outside the classroom. Classrooms with teachers, friends and textbooks are of course one way to learn but they are not the only.
I would bet that you studied about the civilizations and major historical events in your history class. All that was really neat. But nothing beats traveling to historic landmarks and exploring your way around a city’s history and culture.
In fact, traveling is the best way to learn things and the things that matter. It’s one of life’s greatest teachers.
Egypt is home to some of the greatest ancient wonders of the world…Pharaohs, dazzling temples and tombs and historic treasures that wow all who visit…us included! To stand before the many historical sites was truly amazing!
The Great Pyramids of Giza are the largest of all the Egyptian pyramids and one of the Seven Wonders of the Ancient World. It’s part of a larger complex called the Giza Necropolis. There are two other major pyramids in the complex including the Pyramid of Khafre and the Pyramid of Menkaure. It also includes the Great Sphinx and several cemeteries. I marveled at its design and was in awe of its size! It’s enormous!
Fun facts about the Pyramids of Giza:
The Pyramids of Giza were built almost 5,000 years ago and were constructed with over 2 million stones. They transported the granite from Aswan to Giza but how? Each stone was cut to perfection…but with what type of tools? There are lots of theories on how the Egyptians were able to lift the large stones to the top. It’s possible they may have used ramps and sleds to move the stones up the sides of the pyramid.
The pyramids were built on the west bank of the River Nile. The Egyptians believed that West was the direction of death, while East was the direction of life. This was based upon the birth (rising) and death (setting) of the sun. Therefore, all “cities of the dead’ (burials, pyramids, mastabas, rock-cut tombs, cemeteries, etc.) were on the West side of the Nile, while the ‘cities of the living’ were on the East side of the Nile.
The pyramid of Khufu (Cheops in Greek) is the tallest in the world. It was 481 feet when completed but erosion and vandalism have reduced its height to 451 ft high today. As I stood at the bottom looking straight up, it is VERY tall!
Historians estimate that over 100,000 people were involved in constructing the pyramids.
Despite the scorching heat that can often be felt in Egypt, the temperature inside the pyramids remains a constant 20 C – the average temperature on earth.

This was quite an experience. First, we climbed up the steep steps that lead to the entrance on the north side of the pyramid. When we reached the opening, there was a guard who told us we couldn’t take a camera in the tomb. He kept it until you return to the entrance. Cell phones are fine, though.
As we entered it was dark, humid and musty. It looked and smelled similar to a cave. Further into the “cave” the pathway began to narrow and the ceiling height dropped. So we crouched down and continued with one foot in front of the other, holding onto the railings, climbing straight to the top.
Inside the Great Pyramid are three major rooms: The King’s Chamber, The Queen’s Chamber and the Grand Gallery. The King’s Chamber is the highest point in the pyramid. It contains a large granite sarcophagus. It’s dark at the top and the chamber is quite small.
If you are claustrophobic, you might want to think twice about going deep into the Great Pyramid of Giza. The Great Gallery is ultra-narrow, and you will feel like the walls are closing in. But, if you’re comfortable in closed spaces, it’s totally worth it. I personally liked the challenge of climbing to the top and would do it again!
Just because we’ve left school doesn’t mean our education stops. Learning keeps us young, and travel is one of the greatest teachers of all. Travel inspires a sense of wonder and discovery, and there’s an entire world of things to do and people to meet. When you travel, you never stop learning.

Greetings from Cairo, Egypt. Allan and I arrived here on Thursday afternoon and have been on the go since we touched down. Egypt is the adventure of a lifetime. There are so many different experiences to enjoy and destinations to discover. It’s hard to choose one reason why you should visit Egypt. They have amazing weather year-round (It’s 108 degrees today!), the most incredible ancient wonders of the world and a rich history.
The great thing about Egypt is the diversity of the attractions. Each destination has something special about it. Each town and landscape captivate you with unique history, friendly people and stunning nature.
Egypt is home to some of the greatest ancient wonders of the world…Pharaohs, dazzling temples and tombs and historic treasures that wow all who visit…us included!
So why Egypt and why now? We were invited by Atlas Ocean Voyages to experience their brand spanking new to the cruise world all-inclusive small ship. They sail to unique and adventurous locations such as Antarctica and Egypt.

Our adventure began with exploring Cairo, Luxor and Alexandria the last few days. And because there was so much to see and do, we added a few days at the beginning of the trip and created a private tour with an English-speaking Egyptologist guide to immerse ourselves and experience the civilization of Ancient Egypt. Many of the sites we visited are part of the “top 10 experiences” listed below. Amazing! Incredible! Lots of checking off a bucket list.
Egypt has more than 3,000 years of history and the spirit of adventure runs deep as we trek through well-known destinations and remote ports of the Mediterranean. Sounds fun, doesn’t it!
Next, we will board the “World Navigator” and sail off at sunset to visit Paphos, Cyprus and then to the Greek Islands of Mykonos, Santorini, Rhodes and Patmos. This particular sailing is a 9-Night Cairo to Athens: Pyramids and Fortresses.
We are doing the same when we arrive in Athens by extending our trip to get a true local feeling! We’ve scheduled a food tour to become an authentic Athenian, along with a guided tour of the sacred rock of the Acropolis and one of the world’s most important historical structures, the Parthenon.

Egypt: 10 Unbelievable Experiences
1. The Pyramids and Great Sphinx of Giza
The Pyramids of Giza were built almost 5,000 years ago and is the last surviving of the Seven Wonders of the Ancient World.
The Great Pyramid of Giza, also known as the Pyramid of Khufu or the Pyramid of Cheops, is the oldest of the three main pyramids on the Giza plateau and is usually at the top of most visitors’ lists of attractions to see.
2. Egyptian Museum
The Egyptian Museum houses the world’s largest collection of pharaonic antiquities anywhere in the world with more than 120,000 statues, jewelry and antique treasure pieces. The museum’s two most viewed collections are the golden treasures unearthed from Tutankhamen’s tomb along with the fascinating Royal Mummies exhibit room.
3. Cruise on the River Nile – The World’s Longest River
The Nile runs through 11 African countries and was instrumental in the formation of ancient Egypt. It is spiritually significant as Ancient Egyptians believed the east represented birth, and the west where the sun set, represented death. That’s why all tombs are located west of the Nile.
4. Explore Historic Cairo
Cairo is the capital of Egypt. And Islamic Cairo is the historic heart of the city. Walking along the streets you’ll see one of the largest collections of historic architecture in the Islamic world. Some of the top things to do include visiting Al-Azhar Mosque, visiting Salah El-Din Citadel, taking a stroll down Al-Muizz li-Din Allah al-Fatima Street (al-Muizz for short), shopping in Khan el-Khalili, and visiting Al-Rifa’i Mosque.
5. World’s Oldest Open-Air Market
The Khan El-Khalili souk is a very large maze filled with stands of spices, food, clothing, leather goods, jewelry, antiques and so much more. This is the go-to place for souvenir shopping. The best part is you can have fun bargaining as nobody pays retail here.
6. Marvel at the Karnak Temple
The Karnak Temple is the second most visited site in Egypt, after the Pyramids of Giza. It is also the second largest temple complex in the world (Angkor Wat in Cambodia is the largest). One of the more famous settings is the Great Hypostyle Hall, an awe-inspiring section where the streets are lined with ram-headed sphinxes as you enter the main hall with 134 massive columns arranged in 16 rows. Each column tells a s story with beautiful reliefs on the pylons.
7. Explore the Valley of the Kings
The Valley of the Kings has been the site of royal burials in Egypt since 2100 BC. It’s now home to 63 incredible royal tombs. Although the site has decayed over the centuries due to treasure hunters and floods; the Valley of the Kings still remains an impressive ancient site to explore with many believing there are more undiscovered tombs. This area is also home to the tomb of King Tut “Tautankhamun”.
8. Sunrise Hot Air Balloon Trip over Luxor
Getting up at 3:30 am for a 4:30 am departure has never been so rewarding. Imagine soaring high above the ancient landscape of the Pharaohs in the area called “Valley of the Kings”. Here you’ll have great aerial views and will see how vast the land is below you.
Seeing everything from the air gives you a totally different perspective on the locations of all the landmarks and the engineering achievements it took to construct them.
By having an early start to your day, you’ll see so many sites before the crowds get going. This will bring about great excitement for all you will see that day.
9. Luxor Temple
Luxor Temple looks and feels like a smaller version of Karnak Temple. What sets it apart is the temple is not dedicated to a cult god or a deified version of the pharaoh in death. Instead, Luxor temple is dedicated to the rejuvenation of kingship; and is why many of the pharaohs of Egypt were crowned here.
10. Tomb of King Tut “Tutankhamun”
Tutankhamun, commonly referred to as King Tut, was an ancient Egyptian pharaoh who was the last of his royal family to rule during the end of the 18th Dynasty.
His tomb was discovered in 1922 and contained thousands of artifacts, a sarcophagus containing his mummy, and a now-famous headdress. It took almost ten years to catalog the contents of the tomb. Since the tomb’s discovery, King Tut has become the world’s most well-known Egyptian pharaoh.

There I’ll have the opportunity to see the Great Pyramids of Giza (believed to be the last remaining of the Seven Wonders of the Ancient World), King Tut’s Tomb in Luxor and The Temple of Karnak. I’ll also visit the Greek islands of Mykonos, Santorini, Rhodes (Lindos) and Patmos. I can’t wait to share with you everything I’ll experience on my trip.
The more I travel, the more my passion for finding new travel experiences grows, and so then does my bucket list. That is why I’m also excited for my visit to Cyprus so I can check out the Adonis Baths in my search for long-lasting youth 😊.

Burj Khalifa – The ‘sky’s the limit’ when you ascend to the 124th floor of the remarkable ‘Burj Khalifa’ as the world’s tallest skyscraper and an iconic symbol of the Dubai skyline.
Burj Al Arab Jumeirah – A hotel that sits on a man-made island and is home to cutting-edge engineering — from the unique man-made beach and infinity pool terrace, to one of the tallest grand atriums at 180 meters high. It’s well worth the visit.
Old Dubai – Journey into Dubai’s past with a visit to the heritage district located on the banks of the Dubai Creek. Once the entryway to the Gulf’s most successful pearl diving port, the Creek’s legendary presence is still felt today as fishermen and merchants crisscross the calm waters in their traditional dhows. Visit the original souks (markets), that both locals and tourists flock to. A visit to the famous Spice Souk and the Gold Souk is not to be missed.

Being tax-free definitely, has its rewards. Dubai offers a shopping experience like no other. From global brands to unique finds, the city’s shopping scene is one good reason enough to visit this glamorous side of the world. The city is where you will find Dubai Mall, the largest shopping mall in the world. Apart from shops and restaurants, the Dubai Mall houses a towering aquarium, a huge ice rink, and an indoor amusement center. It also features the Dubai Fountain wherein shows are being played by schedule. The fountain features world-class light and sound synchronization which, they say, can be viewed from the moon.

From desert dunes to dancing fountains to inside snow skiing, the sky’s the limit, literally, as you take in Dubai’s unique experiences. With so many options to choose from, I’m going to let the pictures do the talking.

On Friday, I flew home from a destination evaluation trip to Turks & Caicos. As I cruised 34,000 feet above the Caribbean, I reflected on how wonderful and unique the many different islands are in this part of the world. I’ve been to several of them and recently enjoyed visiting St. Thomas and St. John earlier this year for my vacation. For those of us on the east coast, the Caribbean is just a short direct flight to a beach paradise.

I grew up in a home where everything we ate was homemade. My mom made jams, jellies, breads, relishes, canned fruits and vegetables, and baked too. She also loved to try new recipes. Quite often she would look through cookbooks or magazines to see if something sparked her interest. And if it did, she would create her grocery list and then head out to the local market and gather the ingredients she needed to make the recipe. Upon return, she would spend quite a bit of time making something tasty for our family.
My sister, brothers and I would return from our after-school activities and find another newly inspired, delicious meal waiting for us on the table.
My mom also started a Dinner Club with 6-8 couples in our neighborhood. The ladies would gather each month and after lots of discussion and opinions, they would select a theme or country to feature at their party.
It was fun to watch them flip through the pages of Bon Appétit and various cookbooks to find new and interesting recipes. There were so many books and magazines that they piled them high on the table or on the floor.
Our kitchen was always buzzing with a lot of activity. Something was on the stove or in the oven all the time. I am sure this is why my siblings and I developed an interest for cooking. What makes it so much more fun nowadays is taking it beyond the cookbooks and magazines and actually traveling around the world and trying various specialties in destination. There’s nothing better than experiencing a new culture through their food…and being on location is the best!
The language of food has no limits because a foodie’s love crosses borders and connect cultures!
Travel is about broadening your horizons – seeing new sights, meeting new people, and understanding new cultures. And it’s one of the best ways is to immerse yourself in the diverse flavors of the world. Every country has its own unique cuisine, often inspired by waves of immigration, the local environment and the ever-growing community of travelers.
My recent trip to Morocco certainly checked the box of smelling new smells, tasting new foods and learning how to cook in a way that I had never done before. Nor had I seen my mom prepare food like what I learned from a cooking class at La Maison Arabe in Marrakech.
Moroccan cuisine is known for its numerous tagine dishes. A tagine is both the cookware and the dish that it is cooked in. Tagine food, otherwise known as Maghrebi, is a slow cooked stew made with meat, poultry or fish, vegetables (potatoes and carrots) and topped with fruit (dried lemons, prunes or apricots), spices and nuts. A small hole at the top of the cookware’s lid periodically releases some of the steam, to make sure that the food does not get too soggy.
Tagines are normally shared dishes served with lots of flatbread; the tagine vessel will sit in the middle of the table and families or groups will gather around, using fresh bread to spoon up the ingredients. Eating in this way brings a great social element to mealtimes!
At our cooking class, we made Chicken Tajine. It was so delicious that I thought you may want to try it too. So, here’s the recipe.
If you do not have the special tajine cooking dish, then you could use a heavy pot or skillet. If you decide to make it, let me know how it tastes!
Chicken Tagine with Preserved Lemons & Olives
INGREDIENTS
1 lb. whole chicken (cut into large chunks)
1/2 red onion (finely chopped)
1/2 of a preserved lemon
10 purple or green olives
2 garlic cloves (finely chopped)
1 tbs parsley finely chopped
1 tbs cilantro (finely chopped)
2 tbs of olive oil
1 tsp ghee (clarified butter)
water
SPICES
1/2 tsp pepper
1 tsp ginger powder
1 tsp turmeric powder
A pinch of saffron threads
Let the Cooking Begin!
1. Cut up one preserved lemon, separating the flesh from the peel. Set the peel aside and finely chop the preserved lemon pulp.
2. Place the chopped lemon pulp in a heavy pot. Add the olive oil, ghee (clarified butter), garlic, parsley, cilantro, all the spices and a cup of cold water. Mix well.
3. Add the chicken pieces. Then pierce the chicken with a sharp knife in several places so it soaks up all the spices. Mix all the ingredients until the chicken pieces are well coated with the marinade.
4. Add the onions to the pot and mix well.
5. On low heat, sear the chicken pieces for about 15 minutes. The tajine lid should be on the pot to keep the moisture in. Otherwise, the chicken pieces will dry out and stick to the bottom of the pot.
6. Turn each piece of chicken every so often so it does not burn.
7. After 15 minutes, add a cup of cold water and increase the heat to medium. Then cover it and let the juices boil. Continue cooking for about 30 more minutes. Check on the chicken from time to time and add water if necessary.
8. There should always be enough sauce on the bottom, so the chicken does not burn.
9. Once it is cooked, taste & adjust the seasoning if you’d like.
10. Now add the lemon peel and olives. Continue cooking for a few minutes uncovered until the sauce thickens a bit.
**Serve the Chicken Tagine with some delicious bread. Often you can add vegetables such as potatoes, carrots, zucchini, mushrooms & onions in the same pot as the chicken. It is so delicious!

The Moroccan cuisine was so tasty! They not only have tagines for cooking but, they also have some that double as beautiful serving dishes. Some of the decorated ones are truly a work of art with elaborate handmade mosaics and even silver decorations. Of course, I brought 2 home with me…one that is painted with bright colors and has an interesting design and the other from our cooking class!
One of the most memorable aspects of travel for me is the food. I’m talking about the luxury to taste all those new foods around the world, broaden your culinary horizon, and calibrate your taste buds.
The marketplaces and souks are just as memorable. I love the bright colors of the produce, the smell of the freshly baked goods and sweets and watching the people go about their daily routine of shopping and gathering their necessities.
My mouth is still watering after tasting some amazing cuisine in Morocco. It’s a country bursting with unforgettable culinary experiences!

The summer is flying by, and I hope you are enjoying every minute of it. What are you doing to savor this time? We’ve enjoyed traveling to Michigan to celebrate my 2 nephews’ graduating from high school and my niece’s 10th birthday. We also enjoyed a fun-filled 4th of July weekend with our kids and their friends. And I went on a fabulous adventure to explore Morocco and shortly after Panama. The common denominator in all of this is TRAVEL…. either my husband and I went on a road trip or family came to us.
There are so many places to visit that I am in awe of the endless possibilities. One thing I know for certain is that traveling fosters a medium to build human connections with one another by learning about culture, food, new sites, music, and the way people live their day to day lives in different parts of the world. It’s the best on-site learning a person can get. And I have the bug to get out and explore a new destination whenever an opportunity arises.
My latest adventure was to Panama which is the southernmost country in Central America. Panama borders Costa Rica to the northwest, Colombia to the south-east, the Caribbean Sea to the north and the Pacific Ocean to the south. Panama is known as a transit country because of the Panama Canal which is the connection of land that links Central and South America.
While the country is known for its famous canal, its natural attractions include birding, whitewater rafting, and snorkeling. It’s a tropical destination that has a little bit of everything – stunning turquoise waters, white sandy beaches, lush rainforests, laid-back surf towns, misty mountains, and vibrant cafes.
There’s cultural diversity, cloud forests, and colonial charm. Panama’s biodiversity has been said to be three times higher than the United States, Canada and Europe combined.

1. Catching the Sunrise on Volcán Barú
One of Panama’s most recognizable landmarks is Volcán Barú. At 11,400 feet, the active volcano is the tallest mountain in Panama. Barú Volcano National Park has several scenic (albeit rugged) hiking trails. The volcano, which has seven craters, is no longer active…thank goodness!
My alarm went off at 3:30am and I was ready to leave at 4:00am. We headed out for an exhilarating, off-road Jeep 4×4 tour of Barú Volcano. We trekked up and over volcanic rock, bouncing around the car until we reached the summit to catch the sunrise. The ride was quite the experience!
It was awe-inspiring when we reached the top. It was a beautiful clear morning, so we had picture perfect panoramic views of the Pacific Ocean and the Caribbean Sea. It was so peaceful at the summit. The sunrise was spectacular and the views in the distance were impressive!
After we hiked a bit further, we enjoyed freshly brewed coffee or hot chocolate with marshmallows, pastries, hot grilled cheese sandwiches, fruit and other snacks. It was a perfect way to end our trek to the summit of Volcán Barú.
2. Watching the ships pass through the Panama Canal
You can’t go to Panama and not see the Panama Canal, right?
On our first full day in Panama, we visited the Agua Clara locks and saw a ship make its way through the locks with the guidance of a few tugboats. It was fascinating.
But one of the best ways to see the canal is by helicopter 🚁, zooming through the skies, over the canal and in between the skyscrapers of Panama City. And without doors! That will really add to the adventure and thrill! It’s a “must do” exciting experience! 🚁
The Panama Canal was built by the U.S. Army Corps of Engineers between 1904 and 1914. It’s considered one of the seven modern World Wonders. It is also one of the most strategic artificial waterways of the world.
The Panama Canal is a 48-mile ship canal that connects the Atlantic Ocean to the Pacific Ocean, and it is thought that going through the canal saves about two weeks in journey time (and all the costs associated with this).
Ships sailing between the east and west coasts of the United States, which otherwise would need to travel around Cape Horn in South America, shorten their voyage by about 8,000 nautical miles by using the canals.
People pay for that privilege… a lot of money. The average toll is about $150,000. But since the new expansion has allowed larger and heavier ships to pass through, the tolls can be as high as $800,000 per trip. As a result, it’s estimated that the existence of the canal generates approximately 30% of the country’s GDP. That’s a lot of money coming into their country.
3. Visiting the Emberá Querá Village
One afternoon, we rode in a dugout canoe up the Gatun River, near the Panama Canal. The river is large, fascinating and dense jungle. After about a 20-minute ride, we arrived at the Emberá Querá Village. They welcomed us at their wooden pier playing their traditional music. The village chief gave us a brief explanation of the history of their tribe, their traditions, and beliefs.
We spent the afternoon enjoying a traditional lunch of fried tilapia and plantains. All their food is grown and caught locally. We also toured the village with the Shaman. He taught us about the many medicinal plants that are growing on the property. The ladies and children are quite talented and make beaded necklaces, bracelets, and outfits. They enjoy selling their handicrafts to the visitors. The Emberá tribe still lives in harmony with Mother Nature.
4. Visiting Casco Viejo
Historical cities have so much charm and character. We took a stroll through Casco Viejo (“Old Quarter”), the historic district of Panama City and the oldest city in the Americas. These days, the city’s red-bricked streets are lined with restaurants, cafes, and bars, though the Spanish-colonial style architecture makes Casco Viejo feel worlds apart from the glitzy skyscrapers of the newer parts of Panama City. There’s a coastal fortification walk, some churches, and cute little squares. It’s a popular place to stay and eat in.
As we were walking down the street, we came upon a lady in a traditional dress. She stopped long enough for us to take a closer look and to take a few pictures! The dress was very intricate and all handmade…piece by piece and stitch by stitch. It was stunning!
5. Boating in the Gulf of Chiriqui
We explored the virgin shores of Isla Palenque’s Island neighbors in the Gulf of Chiriqui National Park. We enjoyed a day of swimming, snorkeling, walking on the beaches and dining on some incredible food. The chef made seared tuna (freshly caught), avocado and mango salad, quinoa with feta cheese and hot lava brownies! It was so tasty!!
My journey through Panama was more than I expected. It’s a country bursting with unforgettable cultural experiences! From off-roading and seeing the sunrise in Barú Volcano National Park to watching the ships maneuver through the Panama Canal to boating in the Gulf of Chiriqui to walking through the red-bricked streets of Casco Viejo, there is so much to see and do in this incredible Central American country.

Morocco is an incredible country to explore and a destination with many unforgettable experiences. Now, I know I say that for a lot of places, but it really is! It’s been on my “bucket list” for quite some time. I’ve always wanted to ride a camel in the shimmering Sahara Desert, explore maze-like souks, drink tea with Berbers and taste the country’s mouthwatering cuisine! And the fact that it is so close — just an eight-hour direct flight from New York City to Casablanca makes it a convenient destination to explore.
I was thrilled to travel to Morocco recently so I could experience this colorful, fragrant, eye-opening destination and check it off my “bucket list”!
To visit Morocco is still like turning the pages of some illuminating Persian manuscript all embroidered with bright shapes and subtle lines.

There is an abundance of historical sites to explore such as the fortified city of Chellah in Rabat, the tanneries in Fez, and the ancient medina of Fez. There are also the roman ruins of Volubilis, which were a major trading center during Romans times. The main religion in Morocco is Islam, and Mosques can be found in every single town and village. Here are my top 5 Experiences!
1. Camel Trekking in the Sahara Desert
One of the highlights of our trip was spending an evening at Merzouga Luxury Desert Camp amid the dunes themselves. This was the perfect place to relax and gaze at the ever-changing colors of the desert.
We were greeted by talented musicians playing traditional Moroccan music. It was upbeat, cheerful, and added some pep to our step after our 12-hour drive from Fez!
Our tents were made of camel skin typically used by nomadic people. Each one was beautifully decorated with comfortable beds, a full bathroom and air conditioning!
We arrived just in time to ride the camels at dusk. As I sat on top of mine, I looked around and could not grasp with my mind the surreal landscape that surrounded us. I had never seen anything so magnificent. The color of the sand was a gorgeous golden yellow. The silence in the Sahara is like nothing else…with views of seemingly endless dunes from every angle.
After our sunset ride, we enjoyed a traditional meal of Orange Blossom soup, chicken and beef tagine, couscous, potatoes, carrots, dates, olives, homemade bread and fresh fruit.
An early start the following morning meant mounting the camels in the dark so that we could reach a good vantage point for the sunrise. It was neat watching the nomads lead the camels up and over the dunes to meet us.
Once we were mounted, we trekked to the highest peak to catch the sunrise! Our caravan was moving along in formation…ever so slowly, casting long beautiful shadows on the dunes. It was a full-on Arabian vibe!
Once we reached the top, I couldn’t help but feel grateful for the early start and for the long journey to get to the Sahara. The magnificent landscape of changing colors as the sun eased its way up over the Sahara dunes was stunning! The sunrise camel ride was even more spectacular than the sunset.
Riding a camel in the Sahara, spending one night under the stars in a desert camp between the dunes is not only an iconic experience, but it’s one for the memory bank!
2. Intricate Architecture
It is difficult to find a dull building in Morocco – at every turn, you will be impressed by the architecture from the colorful tiles, arching doorways, vibrant colors, intricate lighting, red adobe buildings, decorative carvings and elaborate mosques. One of the most beautiful buildings is the Hassan II Mosque in Casablanca which overlooks the Atlantic Ocean. It’s the second largest functioning mosque in Africa and the 7th largest in the world. It is exquisite and worthy of savoring.
3. Hospitality of the Berbers
We hiked the High Atlas Mountains (from 5,000 feet to 6,000 feet) and ended up in a small Berber village. We were invited into their home for traditional mint tea. It is a common way for them to extend their hospitality and welcome you to their family. The Berbers are one of the oldest cultures in North Africa and much of their traditions and customs have been maintained over the years.
4. Wandering the Medinas
The medinas of Marrakech and Fez are labyrinths of narrow twisting alleyways that are easy to get lost in. You may even experience a complete sensory overload…in a good way! We had fun shopping in the souks that are brimming with items such as ceramics, leather goods, jewelry, spices, clothing, shoes and carpets. I bargained a bit and bought a beautiful leather camel skin backpack!
5. The Flavors of Morocco
If you are a foodie, you won’t be disappointed in the Moroccan food. It is very flavorful with plenty of spices (cumin, saffron, orange zest, salt, pepper & cilantro) and fresh vegetables. We learned to cook chicken, beef and lamb in a tagine (a terra cotta pot with a cone shaped lid), made couscous with cinnamon and raisins, roasted eggplant and baked bread in a traditional stone fire oven. We even learned how to make the perfect cup of mint tea. YUM!!
A mind that is stretched by a new experience can never go back to the same dimensions.

Once cruising resumes, here’s how to set sail with the whole crew.
Since the CDC issued its no-sail order last March, lines have worked hard to make sailings safe once cruises resume – without compromising fun. Ralph Bias, president of a Virtuoso travel agency, says the numerous hygiene and safety protocols include requiring guests and crew to be vaccinated, Covid-19 testing pre-cruise and during the cruise, reducing the number of passengers on each trip, social distancing in dining rooms and lounges, eliminating self-service food options, and increasing the frequency of cleanings.
While many cruisers hope to set sail this summer and fall, Bias notes that pent-up demand is driving a huge interest in 2022 and 2023 itineraries. “Bookings are through the roof, and the majority of my clients are opting for longer, extended voyages,” he says, adding that lines are offering attractive incentives to travelers who book early. “After being homebound for so long, people are looking to make up for lost time.”

Bridge-hopping your way on a Miami to Key West drive is one delicious endeavor.
Less than one degree above the Tropic of Cancer, strung like splinters of shipwreck between the Atlantic and the Gulf, the Florida Keys are as far south as you can go in the continental U.S. For this reason, the archipelago has always been an escape, for pirates and poets, hermits and hedonists, and, during the pandemic, American travelers shut out of much of the Caribbean. Since last year, the adorable Key West airport has grown its airline partners (from four to five), nonstop destinations (from 13 to 16), and flight frequency, making it more convenient and affordable than ever to bypass the four-hour drive from Miami and arrive directly in the Conch Republic.
But that misses the point. Key West is a magical place – in some spots, scruffy and mystic; in others, as pastel-manicured as a box of Ladurée macarons – and if you only have a couple of days, by all means take the flight that gets you poolside by noon. If you have time, however, this iconic drive really rewards dawdlers and dilly-dalliers, lollygaggers and lazybones, particularly hungry ones. Some might think a four-hour ride doesn’t qualify as a road trip. The teeming, flooded cellar of Florida, where time is more a suggestion than an absolute, begs to differ.

The stamps in my passport are very interesting. Some are big and bold, others are multi-colored and others have neat symbols or pictures, all representing the countries I have visited.
Every stamp means so much more to me than just a puddle of ink on sturdy printed paper. Every one of them reminds me of how fortunate I am to be able to travel the world. As an American citizen, it is easier for me to gain entry into most places in the world.

Then there is the Preamble…which is a brief introductory statement of our Constitution’s fundamental purposes and guiding principles. It’s often referred to as our Founding Father’s intentions regarding the Constitution’s meaning and what they hoped the Constitution would achieve.
There are also thirteen quotes from past presidents, poets, activists, scholars and writers that line the top of each spread.
There are iconic patriotic scenes and American icons that are imbedded behind the collage of overlapping stamps. The Statue of Liberty, a bald eagle, and Mt Rushmore, are some of the examples.
American landscapes are reproduced in the backgrounds; cacti of the southwest, wide, open plains of the Midwest, and tropical palms of the Hawaiian Islands. It’s a wonderful document that shows a little bit of what represents America.
I’m sure it will be no surprise that I have saved my old passports. Something about these documents, the ones that literally enable us to ‘pass’ through the ‘ports’ of the world, seem too valuable to casually discard. They unlock history—our travel history, so to speak.

I have carried this essential document with me through airports around the world, largely unaware of its weight in my hand. It has provided me access to so many destinations. It’s like a magic key that unlocks the door to different destinations! That’s pretty remarkable. As I look closely, each page not only shows creative and colorful stamps, but it holds so many fantastic memories that I love to relive over and over again.

Machu Picchu – Peru
Among all the passport stamps, my favorite one – I just love the visual appearance – is probably the one I got when I traveled to Machu Picchu in Peru. Visiting this remarkable site had been on the top of my bucket list for a long time. I have vivid memories of passing through the entrance and turning the corner only to catch my first glimpse of Machu Picchu. I was speechless. I just stood still looking at the beauty that was before my eyes.

Madrid, Spain
Spain is another destination that brings back many fond memories. In 2011, I hosted my first group of students on an international adventure through Spain. We touched down in Madrid and explored many towns, cities, museums, cathedrals and historic sites in Spain. This was a trip of many firsts for the students…first time traveling abroad, first time experiencing a new culture, first time trying traditional Spanish cuisine, first time practicing their Spanish with the locals and for some the first time on an airplane. It’s so neat to hear that many of them have continued their love of travel by studying abroad as a part of their college career.
Entebbe, Uganda
Uganda, to me…is the “Happiest place on Earth”. I love this stamp because it brings back many happy memories. I had an opportunity to travel to Nebbi, Uganda with 3 friends to serve at “Acres of Hope”, a non-profit organization that provides HOPE and a future to orphans and vulnerable children. Pastor Goffrey Keronga and his staff provide children with basic needs such as food, shelter, medical care and an education. Their goal is that the children will mature and become productive, generous citizens who will pay it forward and be bright lights in their community.
While there, we taught 30 house moms entrepreneurship skills…specifically how to start a business from having a vision, to writing a business plan, accounts payables and receivables, paying themselves a salary and more. At the end of the week, the ladies felt so empowered and were ready to move forward with an action plan. They received certificates of completion and we celebrated their successful journey with a wonderful meal, dancing and the best African music!
Republic of Nicaragua
The Republic of Nicaragua is another stamp that brings back wonderful memories. I was invited by NC State University and the Cary-Page Rotary to partner with the Fuller Center for Housing to build 4 houses for families in a small fishing village called Las Peñitas, Nicaragua just outside of Leon. There was a team of 16 that went on the journey!
The Fuller Center for Housing is a faith-driven and Christ centered organization that promotes collaborative and innovative partnerships in an unrelenting quest to provide adequate shelter for all people in need worldwide.
We laid the foundation for the 4 houses, made vats of cement, placed the rebar in position and built the cinder block walls…basically framing the houses.
I also enjoyed teaching the children in the village while their teacher was in town attending a workshop.
The best part was getting to know the families in the village and learning about their love of life, family and community!

Many of us are itching to travel again after being cooped up for a year of Covid-19 lockdowns. And based on my bookings, the demand for international travel has started to rise significantly. Just this week, I waved goodbye to a group of XOOM Tours’ travelers going to Dubai and the Maldives, along with another group heading to Croatia. And next week I’m leaving for a trip to St. John and a couple days after I return, I’m off to Morocco. The one thing all these trips have in common – passports.
Very Important!
Not only do passports expire, but there are other very important conditions that may make your passport invalid.
Pre-Covid-19, I was working with a client who wanted to travel internationally and leave the following month.
Everyone was excited until I found out her spouse’s passport expired in three months. She thought it would not be a problem since they’d be back in the U.S. before it ‘officially expired’.
Unfortunately, the countries they wanted to travel to, like most countries, require passports to be valid 6 months BEYOND your dates of travel in order to guarantee entry.
Four very important things to confirm on your passport!
Six-Month Validity Requirement – Let’s take a closer look at this detail. What is your passport’s “Date of Expiration”? Most countries require a passport to have six months of validity, BEYOND the dates of your travel. Also, many airlines will not let you board if you don’t meet this requirement. You can renew at any time, but it is recommended you do it nine months to a year before it expires.
Blank Pages – Many countries like Canada, Mexico, Peru, the United Kingdom, Italy and Iceland require at least one blank passport page for valid entry. Several others like China, Belgium, Norway, Portugal, and India require two full blank pages. If you show up without the required empty pages, you can literally be turned away. Keep in mind the last two pages of a U.S. Passport do not qualify as visa pages. So if you need a visa, make sure you have an empty page with “visa” at the top.
New Passport, New Visas – When your passport expires, even if your visas are still valid, many countries won’t recognize a valid visa in an expired passport. China, India, Saudi Arabia and Brazil are the exceptions, but you’ll have to carry both the new and expired passports.
Face Tattoo or Face Surgery – This applies if someone has been in an accident resulting in major facial surgery that alters their appearance, or those that may have added facial tattoos or piercings that significantly alter their appearance. You’ll need to renew your passport and passport photo.
Did you know your passport has a tiny microchip inside?
Most people are surprised to learn there’s a tiny microchip in their passport. The chip is embedded inside the cover of all U.S. Passports issued since 2007. It holds a copy of your personal contact information found on the photo page of your passport. It’s used by an immigration official to read the data and confirm it matches with the information that’s inside. The purpose of the chip is to prevent someone from altering the picture or forging any of the information.
Other fun facts about passports!
Most of the world’s passport covers are RED. There are many different shades, but red is the most common for passports. Other common colors are blue, green and black.
Citizens of the Vatican state in Italy (smallest country in the world) have their own country passport. You will not be able to have your passport stamped there because they do not have immigration or border control points.
There was once an Iranian man who lived in an airport in France for 17 years due to failing to present a passport to French immigration officials. This story was the inspiration for the Steven Spielberg film, The Terminal.
The only person in the world who is not required to carry a passport when traveling abroad is Queen Elizabeth II. The British Passport is issued by ‘Her Majesty’, the Queen. Therefore, the Queen does not carry one that otherwise would have to be issued to herself! All other members of the Royal Family, however, have passports.
Even though passports are valid for ten years, the time can go by quickly, and you may find your passport is expired when you need it most. If you’d like to travel but discovered your passport is expiring or expired, I can help.

Set on 42 acres along Oahu’s North Shore, the Polynesian Cultural Center has a lagoon that hosts daily canoe tours and an exciting cultural Canoe Pageant.
Their award winning Ali’i Luau takes guests on a journey to learn about Hawaii’s royalty while enjoying traditional Polynesian food and entertainment.
You can also enjoy their immersive cinema presentation “Hawaiian Journey”, which is a tribute to the splendors of Hawaii.
Ha: Breath of Life show:
The symbolic story of Mana and his beloved Lani, punctuated by Polynesian dance, music and blazing fire knives, is told in “Hā: Breath of Life,” their stunning evening show featuring over 100 Polynesian natives, special effects, animation and surround sound. It is a Pacific isle saga of birth and death, love and family, tragedy, and triumph.
Oahu’s North Shore
If the perfect wave exists, you’ll find it on Oahu’s North Shore. The towering, glassy winter waves of this legendary surf mecca draw the best surfers in the world, while smaller and gentler summer waves are better for beginners.
Stretching for more than 7 miles, the beaches of the North Shore host the world’s premier surfing competitions during the peak winter months, including the biggest of them all, the Vans Triple Crown of Surfing.
Waimea Bay, Ehukai Beach and Sunset Beach are great places to sunbathe and stroll along the shore—just leave surfing the huge waves to the pros because they can be very dangerous for inexperienced surfers.

Haleiwa Town
Your first stop along the North Shore will be charming Haleiwa, about a one-hour drive from Waikiki. More than the laid-back surf town it seems, Haleiwa is filled with local style and country ambiance, as well as cool surf shops and boutiques, charming art galleries and understated restaurants housed in plantation-era buildings.
Rich with island history, Haleiwa is now the social and artistic hub of the North Shore. Here you’ll find surfers fueling up on shrimp or other delicacies at one of the town’s abundant food trucks before hitting the famous beaches of Waimea Bay, Ehukai (Banzai Pipeline) and Sunset Beach. You’ll also find locals and visitors winding down with a shaved ice after a day in the sun or shopping at boutiques filled with unique gifts that will allow you to bring back a piece of Hawaii with you. Haleiwa is a far cry from the excitement of Waikiki, and that’s exactly how the people of the North Shore like it.
Waimea Bay Beach Park
Waimea is famous for its 30-foot waves in the winter and is a top place to watch some of the world’s best and bravest surfers. During summer, the water calms considerably and is a great destination for swimming, snorkeling and diving.

North Shore Oahu is known for its beautiful beaches, amazing surf and epic sunsets, but it is also famous for its delicious food trucks. Offering everything from tacos and Thai food to pizza, to shrimp and local Hawaiian cuisine, there are so many tasty delights to enjoy!

Hiking Diamond Head
The unique profile of Diamond Head (Lē‘ahi) sits prominently near the eastern edge of Waikiki’s coastline. Hawaii’s most recognized landmark is known for its historic hiking trail, stunning coastal views, and military history. Diamond Head State Monument encompasses over 475 acres, including the interior and outer slopes of the crater.
The trail to the summit of Lē‘ahi was built in 1908 as part of O‘ahu’s coastal defense system. The 0.8 mile hike from trailhead to the summit is steep and strenuous, gaining 560 feet as it ascends from the crater floor. The walk is a glimpse into the geological and military history of Diamond Head.
A concrete walkway built to reduce erosion shifts to a natural tuff surface about 0.2 mile up the trail with many switchbacks traversing the steep slope of the crater interior.
The ascent continues up steep stairs and through a lighted 225-foot tunnel to enter the Fire Control Station completed in 1911. Built on the summit, the station directed artillery fire from batteries in Waikiki and Fort Ruger outside Diamond Head crater.
At the summit, you’ll see bunkers and a huge navigational lighthouse built in 1917. The postcard view of the shoreline from Koko Head to Wai‘anae is stunning, and during winter, may include passing humpback whales.
Hawaii is a magical destination filled with adventure, beauty, history and a “spirit of aloha”! If you are considering traveling to Hawaii, then I suggest you bookmark this site to obtain the most recent COVID protocols, island by island.
The state of Hawaii is made up of counties, however in this case, each county (basically each island is its own county with Lanai and Molokai falling under Maui County) has been allowed to create its own COVID requirements which has presented some challenges for inbound and inter-island travelers.
There is legislation being considered in Honolulu currently that would require all islands/counties to abide by the same laws and protocols concerning COVID. Hopefully it will pass so this can all get simplified, but it is VITAL as a Travel Advisor that you stay up to date.

Best Time to Travel to Charleston
For those that have fallen in love with Charleston, there really isn’t a bad time of year to visit. The Low Country is charming during any time of the year. The winter months of January and February tend to be mild. You may need a light jacket while walking around exploring the city.
Summers tend to be hot and humid with temperatures peaking in July and August. But that means it’s a perfect destination to visit then head to one of the many nearby beaches for some fun in the sun!
My favorite season to visit Charleston is in the spring when it is the most captivating. The flowers are colorful and abundant at every turn. The city is so fragrant with the scent of jasmine. Azaleas are bursting forth in vibrant shades of pink. The beaches are nearby. The sun is warm on your face and the soft sand will feel delightful on your feet.
There really is no city quite like Charleston in the springtime.

Where to Stay in Charleston
Hands down, my favorite hotel is Hotel Bennett. The location is impossible to beat…on upper King Street alongside historic Marion Square, a 10-acre park that hosts festivals, picnics, farmers markets and more. There are many shops and restaurants within walking distance of the hotel.
The site on which Hotel Bennett sits once housed the Charleston County Library and the former Citadel military college. To pay homage to the former library, each guest room has bookcases that proudly display many of the books that were once in the county library. And every room has different sets of books.
While Hotel Bennett feels elegant and grand, it’s also comfortable and welcoming. Each room has charming but contemporary furnishings. The bathroom has a beautiful standalone tub. The colors in the rooms are so calming and elegant.
La Pâtisserie, their own pasty shop, serves the Holy City’s finest coffee, breads and pastries, and breakfast sandwiches and quiche. Renowned French Pastry Chef Rémy Fünfrock ensures both authenticity and freshness with each delectable delight! I had the pleasure of meeting Chef Remy when I stayed at the hotel.
I love the roof top pool too. It’s perfect for cooling off after a day of exploring the city.
And a must see…Camellia…Charleston’s premier Champagne Lounge features an extensive collection of bottle and by-the-glass offerings paired with a decadent selection of caviar, ceviche and tartare. Stop in to see the beauty within this champagne bar! It’s stunning!
Even if you are not staying at Hotel Bennett, stop in for a meal at their restaurant Gabrielle, a Parisian style outdoor/indoor eatery started by an acclaimed chef from New Orleans. You will be glad you did!

Charleston is a culinary delight. Each time I visit Charleston, I head back to Eli’s Table. The menu features bold, world flavors using fresh and local ingredients. They are known for their award-winning Duck & Waffles and Shrimp & Grits! Both are mouth-watering, deliciousness in every bite…oh so good!!
A few weeks ago, I went on a “Girl’s Getaway” to Charleston and we enjoyed another delicious meal at Eli’s Table! We shared a few of the appetizers and entrees…the Smoked Gouda Fondue, Fried Green Tomatoes, Prosciutto & Fig Crostini, Shrimp & Grits, Duck & Waffles, Grilled Brussel Sprouts and Beignets. 10 Fun Facts about Charleston
Charleston was the fourth largest city in colonial America, and the wealthiest!
Charleston boasts the first public college, museum and playhouse in the US.
The first golf club in America was established in Charleston in 1787.
North America’s longest cable-stayed bridge, the Arthur Ravenel Jr. Bridge, spans the Charleston Harbor, connecting historic Charleston and Mount Pleasant.
Dr. Alexander Garden, a Charleston physician, first imported “Cape Jasmine” from South Africa circa 1754. The flower was renamed “Gardenia” after Dr. Garden.
Charleston’s first baseball team was the Sea Gulls, established in 1886. The team is now called the Charleston River Dogs. Part owner and “Director of Fun” is actor and Charleston local Bill Murray.
Look around Charleston and you’ll see the image of pineapples everywhere-on front doors, gates, and even in the middle of the most famous places in the city, the Pineapple Fountain at Waterfront Park. Why? Local legend has it that when a ship captain arrived home after a long journey, he would hang the tropical fruit in the door to announce he was home and welcoming friends and neighbors to come visit.
Catfish Row, the setting of Porgy and Bess, the first and most important opera in American musical history, was based on Cabbage Row in Charleston. The opera about African American life in Charleston in the 1920s was written by George Gershwin during his vacation on Folly Island in 1934. You can still walk by Cabbage Row today.
Buildings in Charleston must be no taller than the tallest church steeple, which is St. Matthew’s Lutheran Church. The Holy City gets its nickname from its skyline full of steeples, not necessarily the behavior of its fun-loving citizens.
The old “single houses” in Charleston have their narrowest side facing the street, and long, often double- or triple-decker porches or “piazzas” stretch along the long sides of the house. The front door is on the side of the house, and the house is only one room wide. It’s a really distinctive style of architecture perfectly suited for Charleston’s old tax laws and sticky climate. The piazzas face south and west to catch the coastal breezes while the narrow façade on the street side limits the property tax burden.

Breathtaking Iceland – The Land of Fire & Ice
Iceland is one of the most incredible adventure destinations in the world and a popular spot for nature lovers. It’s a country of extreme geological contrasts. It is often called the Land of Ice and Fire, a land where volcanoes and geothermal heat have made their mark on the landscape, along with the many glaciers and lagoons, fjords and geysers, a land of pristine and unspoiled nature.

Adventure in Croatia – the Land of a Thousand Islands!
Croatia is breathtaking! It’s home to a beautiful coastline on the Adriatic Sea, UNESCO-listed old towns of Dubrovnik, Split and other towns and cities from the Greek, Roman, Venetian and Ottoman eras, stunning lakes and forests, picturesque national parks, a fascinating history, exceptional wine and delicious sea-to-table cuisine.
Being a coastal country, it is a place for water sports like boating, sailing, kayaking or diving. It’s a great way to admire the coastline from the water.
One of the many crown jewels of Croatia are the Dalmatian Islands, known for its pristine beaches, limestone cliffs, crystal-clear waters and beautiful vineyards and olive groves. And even if it’s not pretty beaches you seek, stone castles, magnificent waterfalls, UNESCO sites, and fabulous hiking await travelers of all kinds!
Africa – The Happiest Place on Earth
Usually, the number one reason for travelers to visit Africa is to embark on a safari or to climb Kilimanjaro, and while Africa certainly does have some of the most prolific wildlife viewing opportunities and one of the seven summits, there are so many more reasons to visit Africa.
As the second biggest continent in the world, Africa is jam-packed with some of the world’s biggest things:
The largest desert in the world, the Sahara Desert.
The longest river in the world is the Nile River, which I crossed when I was in Uganda last November. The water level was so high due to large amount of rain that it was intense…raging and flowing rapidly beneath the bridge where we crossed the river.
It’s home to the largest living animal, the African elephant, which can weigh up to 7 tons.
You’ll also find four of the five fastest land animals in the world here – the cheetah (70 mph), wildebeest, lion, and Thomson’s gazelle (all about 50 mph).

Costa Rica is the perfect combination of relaxation, adventure, culture, fine cuisine and wildlife. The jungles are incredible. The beaches are sparkly. The forests are lush. The waterfalls cascade through the cliffs and mountains. The volcanoes are active, and biodiversity is spectacular.
Costa Rica has an astonishing diversity of unreal places to visit. This beautiful country is a traveler’s eco-touristic paradise, where sloths s-l-o-w-l-y make their way through forest canopies and monkeys swing through trees. BEWARE…LOL!

In May, I’ll be heading to St. John, US VI to explore the beautiful beaches, the surrounding islands and to go hiking in the Virgin Island National Park.
In June, I will be biking through the mountainous regions of Caldas, Risaralda and Quindio near Bogota, Colombia! We will be exploring coffee plantations, local wood workshops, a sheep farm and staying with local families. What an adventure!
In early July, I’m off to the picturesque island of Turks & Caicos with a small group of Travel Advisors. I’m looking forward to visiting several resorts so I can match my clients with the perfect choice while in this beautiful Caribbean destination.
In late July, I will be cruising down the Mississippi River from Memphis to New Orleans on the American Countess, a beautiful new paddlewheel ship with American Queen Steamboat Company!
I personally can’t wait to travel to these places! The memories will forever be a part of my travel experiences!

Happy Songkran! Happy Thai New Year! Grab your buckets, turn on your hoses, fill those super soaker water guns and get ready to join in the fun of the BIGGEST water fight in the world!
Today, April 13th, is the first day of Songrkran, also known as the traditional Thai New Year or the water splashing festival. Coincidentally, it’s held during the hottest month of the year. Songkran is one of Thailand’s grandest and most important events that runs from April 13 to April 15, 2021.
The word Songkran is from the Sanskrit language and means the passage or transformation of the sun from one sign of the Zodiac to another. It’s a common and traditional practice that food is given to the monks as a sign that the holiday has begun.
It’s also considered a family day and a festival of happiness. It is Thailand’s way of life and their treasured legacy and heritage. It’s a time where the people who have moved to other towns and cities travel back home to be reunited with their families.
Everyone gathers together to show gratitude to their elders. Houses are cleaned and images of Buddha are dusted and sprinkled with water. Family members visit the temples for prayer and offering. It’s a happy time and an opportunity for celebration!
As a Songkran wish for this year, let the water wash us from this gloomy time and bless us with an abundance of good health, happiness and prosperity.
The most famous Songkran activity is throwing water at one another. It’s for this reason that it is often called the Water Festival or the biggest water fight in the world. The water is a symbol for the cleansing of spirit and body. It is also supposed to wash away the sins and bad luck from the past year.
Over the years the festival has turned into an all-out water war. People line the streets with buckets full of water, water hoses or super soaker water guns! The fun part…no one is spared, not even the onlookers, the tourists, the police force…no one! Not only will you get wet, you can expect to get SOAKED! Everyone!
Doesn’t this sound like a blast! What a way to ring in the New Year!
I have fond memories of my visit to Thailand. It’s a country rich in history, beautiful beaches, colorful temples, delicious street food, floating markets, elephants, Thai massages, festivals, treasured heritage and friendly people. It looks like I need to return in April to ring in the New Year, Thai style, with buckets in hand and the expectation that I will get soaked like everyone else!
This past weekend Amazing Thailand and the Tourism Authority of Thailand hosted “Spring Into Songkran Splendors” and invited me to join in on the fun. The Zoom festivities were live from Chiang Mai and included an offering of Thai New Year blessings from the Baan Rai Kong Khing Community, a visit to Patara Elephant Farm and a cooking class with Chef Arnold Myint. What a wonderful celebration full of tradition!
Instead of throwing buckets of water on each other, we rang in Songkran by whipping up some traditional Thai food. After all, what’s a celebration without some tasty cuisine?
Celebrity Chef, Mixologist and Culinary Instructor Chef Arnold Myint taught us how to make Som Tom Thai, Gai Yang-Thai BBQ Chicken and Sticky Rice.
We learned about the different ingredients that are used to make authentic Thai food! The secret is the fish sauce, palm sugar and the dried shrimp. Our meal was unbelievably delicious! Tangy, sweet, spicy and sour! A whole lot of goodness in each recipe! So tasty!

It’s a picture-perfect destination that’s popular for nature lovers, surfers, honeymooners, hikers, or anyone looking to slow down and enjoy the slower pace of island life. It’s a one of a kind culture with abundant natural beauty, endless adventure and flawless beaches. The Hawaiian Islands have it all!
Hawaii is HOT, HOT, HOT!
And I am not talking about the lava flow. Hawaii is such a unique and diverse vacation destination and US travelers are rushing to plan their trips there during this time when domestic travel feels “safer”.
After all, Hawaii can feel like an exotic, international vacation without ever leaving the good ‘ole USA. There is so much to do in the Hawaiian Islands – a wide range of activities and experiences – however I always like to share my top 5 things of what NOT to do when visiting one of my favorite vacation destinations.
Here they are…
1. DON’T visit too many islands!
Hawaii is not meant to be experienced in a hurry, so why do so many people want to visit all 5 major islands in 10 days? Each time you switch islands, you basically use up a day of your vacation with packing, checking out of your resort, returning your rental car, early arrival at the airport, baggage claim, picking up your new rental car, driving to your new hotel, and settling in. I recommend no more than 2 islands in a week (focusing on only one is even better!), 2 islands in 10 days, or 3 islands in 14 days to be able to enjoy each destination to the fullest.
2. DON’T assume that a Hawaiian vacation is like staying at an all-inclusive resort!
First, there is no such thing as an all-inclusive resort in Hawaii. State law prohibits the inclusion of alcohol in a hotel room rate/package. And it wouldn’t be the wisest choice to eat all your meals at a resort where there is so much deliciousness waiting outside. The best-case scenario is to find a good resort package that includes a wonderful breakfast each day and then explore the many culinary options that are open to you. Plus, Hawaii is an easy driving destination and some of the best experiences are found outside of the resorts.
3. DON’T let a luau be the only cultural education you get!
Before you leave for your vacation, do a little reading on the fascinating Hawaiian history and culture. There is so much more to Hawaii than the beach! Learn some much-used Hawaiian words; Attend cultural workshops and classes that are often offered free at your resorts. And, most of all – be respectful of the Hawaiian ways and customs. Even though it is still the USA, you are a lucky visitor.
4. DON’T pack your stilettos and neckties!
“Formal” attire in the islands means putting on a fresh Aloha shirt and your best flip flops. Men do not wear ties under normal circumstances and women can get by with sundresses and sandals. However, DO remember to bring strong, reef-safe sunscreen and your favorite sunglasses and/or sun hat. The rays can be brutal, and you don’t want to ruin your vacation with a killer burn.
5. DON’T forget to leave your road rage and impatience at home!
Life just moves slower in the islands, and you need to adjust your expectations. NEVER honk your horn unless it is an emergency because it is considered very rude. Always be generous letting locals pass you or letting people merge or turn into traffic. If it takes a moment for someone to acknowledge you because they are “talking story” with someone else, take a deep breath and smile. Your turn will come! And a meeting time usually means 10-15 minutes later. Get used to it…you might even relax a little!
